Excellence in Concessions Awards: Best New/Refurbished Space in Food and Drink

Marquee Club presented by Lexus, Fox Theatre, Atlanta David Ploski, club manager, and Rob Chaffin, executive chef Photo: Alive Coverage Aiming high, all the way to the rooftop The Marquee Club at the Fox Theatre in Atlanta has numerous physical assets that give it obvious appeal. The main level is adjacent to Peachtree Street, Atlanta’s famous, bustling thoroughfare, and large storefront windows provide a clear view of the absorbing scenes of the street. The windows also provide a tantalizing look inside to all theatergoers, ramping up the exclusive nature of the space, said Allan Vella, president and CEO of the Fox Theatre. The 14,000-square-foot, three-level club has a mezzanine level featuring a ceiling that mimics the theater’s blue-sky imagery, including sprawling stars, and offers a quiet, detached place for conversation while overlooking the main level. Three rooftop areas, including an outdoor terrace, provide striking views of the city’s skyline and the Fox’s… Continue Reading Excellence in Concessions Awards: Best New/Refurbished Space in Food and Drink

Excellence in Concessions Awards: Best New Technology

Aramark has the technology in place at about 20 big league stadiums, and the feedback has been positive among fans demanding faster transactions so they can return to their seats and watch the game, company officials said. Mashgin, the company that Aramark partnered with to capitalize on the technology, produces a self-serve system with multiple cameras that uses artificial intelligence to quickly scan prices of food and drink items without barcodes and accept payment with credit and debit cards. Aramark has installed Mashgin units at seven NFL venues for the 2019 season after first testing it about 16 months ago in Major League Baseball. In Denver, it plays a key role for Aramark as… Continue Reading Excellence in Concessions Awards: Best New Technology

Excellence in Concessions Awards 2019

Food for thought: Our annual honors for those who cooked up something new It’s always uncertain where a fork in the road may lead, but a fork in the concourse generally means a concession stand is nearby. That’s good news for hungry fans, who have come to expect far more than a hot dog served with ketchup packets or a beer just like the six they have in the fridge at home. Innovators in the industry work tirelessly to keep up with demand by creating new products, opening more inviting spaces and improving processes. Their work keeps us thinking about what will come next, and each October we honor some of the best for their ingenuity with the Excellence in Concessions Awards. Readers created the nominee list for the five awards this year, and the VenuesNow editorial staff selected the winners. Reading the nominations was great fun, but you can… Continue Reading Excellence in Concessions Awards 2019

That didn’t mean Siep and his colleagues couldn’t elevate the food to match that excitement. They made it a priority, then partnered with foodie celebrities, renowned chefs from across the country and Legends Hospitality to accomplish that.  “We worked hard to find the brands and the partners who really spoke to our fans,” said Andy Yates, Live Nation’s West Coast director of food and beverage. “We wanted what spoke to the overall fanbase, nationally — not looking at it through California eyes.  “The people we… Continue Reading Excellence in Concessions Awards: Best New Concept

Excellence in Concessions Awards: Best Sustainability Initiative

Expanded Waste Diversion Efforts, SunTrust Park, Atlanta Shawn Mattox, SunTrust Park vice president of operations, Delaware North Sportservice Photo: Courtesy Delaware North Sportservice Partnerships enhance greening of SunTrust Park The 2019 season at SunTrust Park, home of the Atlanta Braves, has been a great one for the playoff-bound Braves and a green one for the ballpark. Determined to expand and improve waste diversion from landfill — through reusing, recycling and composting — Delaware North Sportservice, which has operated concessions, premium dining and restaurants at SunTrust Park since 2016, collaborated with the Braves, area waste haulers, business partners and associates to intensify waste diversion at the ballpark and improve the sustainability of the venue’s operations.  Data demonstrates the success of those efforts. Through July, the ballpark had diverted 255 tons of materials from landfill, nearly as much as the 269 tons diverted for the entirety of 2018 and a promising start to reaching… Continue Reading Excellence in Concessions Awards: Best Sustainability Initiative

Excellence in Concessions Awards: Best New Menu Item

Tumbleweed Burger, Isotopes Park, Albuquerque, N.M. Ryan Curry, former assistant general manager/executive chef, Spectra Food Services & Hospitality at Isotopes Park Photo: Courtesy Spectra Red chile cotton candy ignites a ballpark hit Jay Satenspiel, senior vice president of Spectra Food Services & Hospitality’s central region, admits that when he heard about the Tumbleweed Burger, he was skeptical. At the start of the baseball season at Isotopes Park, home to the Triple-A Albuquerque (N.M.) Isotopes, Spectra rolled out the $10 burger — a hatch green chile bun holding a grilled Angus burger, melted ghost pepper cheese and red chile cotton candy. “When I think ‘hamburger,’ I think ketchup, lettuce and tomato,” Satenspiel said with a laugh. “The cool thing about it is when you put cotton candy on a hot burger, it melts. The sugars from the cotton candy penetrated the beef. The flavors just explode in your mouth. It was unbelievable. I… Continue Reading Excellence in Concessions Awards: Best New Menu Item
